Job Purpose: Produce high quality sushi and sashimi dishes to fulfil customers’ orders Key Responsibilities: • Produce high quality sushi dishes to fulfil customers’ orders • Forecast sushi supply needs for the stock room and manage inventory levels • Maintain HACCP standards for dry and cold storage of sushi ingredients, and cleaning and tidying the sushi station and utensils • Continuously improve health and safety standards Competencies and Requirements: Experience: Minimum of 8 years’ experience as a sushi chef in a 5 star Japanese fine-dining kitchen, with Omakase working experience in advance Knowledge/Certificates: Excellent product knowledge of Japanese cuisine, seasonal ingredients, and sushi; accurate knife skills and proven sushi abilities Education: Secondary school or equivalent Language Abilities: Fluent Cantonese, Mandarin, English and basic Japanese
